Sopa de Fideo
Without a doubt, this recipe brings back memories of my childhood. Sopa de Fideo is a warm, comforting soup that is often served as a side or with shredded chicken as an entree.
Ingredients:
1 pack of fideo or 7 ounces (substitute spaghetti broken into 1″ pieces if you are unable to find fideo)
6 cups of chicken broth
1/2 white onion
2 garlic cloves
4 roma tomatoes
1 serrano
Cilantro
Toppings:
Queso fresco
Directions:
1. Puree tomatoes, onion, and garlic then set aside.
2. Heat 2 tbs. of oil over medium heat, add the fideo, and stir to coat with oil.
3. Continue to stir fideo until noodles start to brown.
4. Stir in the tomato puree and cook for another 2 minutes.
5. Add the chicken broth, serrano, a few sprigs of cilantro, and salt to taste.
6. Cover pot and cook for 30 minutes.
7. Top with queso fresco and serve.
