Chicken Taquitos
Taquitos, also know as tacos dorados, are easy, tasty and versatile. You can serve them as a snack, an appetizer, or as a main meal.
Ingredients:
For taquitos:
Shredded chicken (about 2 chicken breasts). I boiled the chicken with 1/2 a white onion, garlic, salt, pepper, and oregano. You can also purchase a pre-made rotisserie chicken.
6-8 corn tortillas
Servilleta (Spanish for kitchen napkin or towel) to keep tortillas warm.
Toppings:
Guacamole: 2 avocados (use 1 for one serving), juice from 1 lime, and salt.
Cotija cheese
Directions:
1. Slice and scoop avocado into mixing bowl, add lime juice, salt to taste, and mix. Set aside for later.
2. Using a large frying pan, preheat enough oil to cover 1/2 inch of the pan over medium-high heat.
3. While oil is heating, warm the tortillas for a couple minutes, then place in servilleta to keep warm. It is important to warm the tortillas before rolling, otherwise the tortillas will break.
4. Take one warm tortilla, tightly roll in chicken, and place into oil. When placing the taquitos into the pan, place them seam side down and hold with tongs for a few seconds so the tortillas do not unroll. Repeat with all the tortillas.
5. Rotate for even cooking.
6. Cook taquitos until they are golden brown.
7. To serve, pour salsa on taquitos, add a generous amount of Cotija cheese, and guacamole.
