Calabacitas
This simple, flavorful dish is served as a side, or add chicken to serve as an entree.
Ingredients:
5 Mexican zucchini (remove stem)
4 ripe roma tomatoes
1/2 of a small white onion
1 cup of corn
1 garlic clove
1 serrano
Salt to taste
Directions:
1. Chop zucchini into fourths, chop the tomatoes, mince the onion and garlic, and chop the serrano.
2. In a large sauce pan, preheat 2 and 1/2 tbs. of oil over medium heat, then add the onions.
3. Sauté onions for 2 minutes, then add garlic and continue cooking for just a minute more.
4. Add tomatoes, serranos, then season with salt.
5. Mix ingredients and cook for 5 minutes.
6. Add zucchini, corn, and season once more with salt.
7. Cover pan, lower the burner, and cook for 15 minutes.
8. Turn off burner (leave the pan covered) and let the calabacitas sit for another 15 minutes.
