Salsa Roja
Salsa Roja is absolutely delicious with pork, meat, or chicken tacos. You only need a few ingredients to make it at home, and the salsa lasts for several days in the fridge.
Here are the ingredients:
4 Roma tomatoes
3 serranos
1 garlic clove
Directions:
1. Line the comal (Spanish for tortilla griddle) with foil. This makes for an easy cleanup.
2. Set the burner to medium-low heat and place the tomatoes, serranos, and garlic on the comal.
3. After a couple minutes of roasting, the ingredients will start showing brown spots. Turn and flip the ingredients frequently to get an even roasting.
4. Once the serranos and garlic are charred - they will finish before the tomatoes - set them aside to sweat. To sweat the ingredients, add them straight to the blender and seal to keep in the heat.
5. After 20 minutes, depending on the size, the tomatoes should be soft and charred.
6. Once the tomatoes are charred, add them to the blender to sweat.
7. Let everything sweat for 10 minutes.
8. After 10 minutes, blend the tomatoes, serranos, and garlic together.
8. Pour salsa into a mixing bowl, and mix in salt to taste.
10. Let salsa cool to room temperature.
